What kind of duck is Brome Lake?

They’re actually Peking ducks, a cream-white-feathered species originally from China, chosen for how tender and tasty their meat is and for how many eggs they produce. These aren’t “made in China” ducks, though—our products are 100% made in Quebec and are even “Aliments du Québec” certified!

Is duck meat healthy?

Duck meat is extremely flavorful and nutrient dense. It’s an excellent source of protein and healthy fat as well as micronutrients including selenium, iron, and niacin.

How do you cook a Brome duck?

Preparation

  1. Preheat the oven at 350°F.
  2. Remove the giblets from the duck, but keep the neck in the cavity.
  3. Put the duck and the two legs in a deep roaster.
  4. Remove the cover and cook 1 hour 30 minutes.
  5. Place the duck on broil 5 minutes for a crispier skin.
  6. Serve with mashed sweet potatoes and parsnips.

Is duck fatty?

The USDA grades duck quality with the classifications A, B and C. Grade A is the highest grade and is usually what is sold in markets. Grade B ducks are less meaty and well finished. Grade C ducks are used for commercial purposes.

Can you use expired duck fat?

Our answer Duck and goose fat keeps very well in the fridge and the label on the packaging should give guidelines as to how long the fat will keep after opening, but in most cases it should keep for at least 3 months. It will start to smell and taste rancid once it is too old so do use your nose as a guide.

Does duck fat have a use by date?

If properly stored in a clean airtight container in the cold part of the fridge, duck fat should keep for six months or longer.
